Making Biscuits with Jellyroll

In the meantime, I was blessed to have my great friend Jellyroll in the kitchen with me this week to cook up some traditional garlic and cheese biscuits. Whenever we're in a kitchen together we have the best time! We just make each other laugh all the time, as you can see in the video! Jellyroll is practically a biscuit expert (she even sees them in her sleep!), so it's a joy to share some dough with her.

Hey Erin! Just thought you might find it funny to know that I can't Believe It's Not Butter in the fridge was from a shoot with the boys! I left it in the fridge just to see if Paula noticed...she didn't, but I'm glad you did! :) -

My favorite recipe, this time of the year!
Sweet Potato Biscuits & Ham
1 large sweet potato
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground mace
2 tablespoons packed brown sugar
1 teaspoon grated lemon zest
1/2 cup (1 stick) butter, softened
2 tablespoons milk
1 pound better smoked ham, sliced paper thinScrub and pierce the sweet potato and microwave it on high until soft, about 10 minutes. Peel and puree in a blender or food processor. Measure out 1 cup.
Blend together the sweet potato, brown sugar, lemon zest, soft butter, and milk.
Mix the flour, baking powder, salt, and other spices together in another bowl.
Gradually and lightly stir the flour mixture into the sweet potato mixture until a ball forms. (If it seems more gooey than doughy, add more flour a little at a time.)
Roll the dough out on a floured surface to a thickness of 1/2 inch and cut the biscuits with a 3-inch cookie cutter. Pierce each biscuit a few times with a fork.
To bake the biscuits, place them on an ungreased baking sheet in a preheated 425° oven and bake until golden brown, about 10 minutes.
To finish, split the sweet potato biscuits in half and fill with ham. Serve warm. Makes 10-12 biscuits.
Make-ahead directions: Prepare the complete Ham in Sweet Potato Biscuits recipe as above, cool, and wrap the sandwiches in foil. When it's time to serve, reheat them in a warm oven, still wrapped in foil, for about 10 minutes. -

The Today Show and the Smithfield Giveaway

I kicked off this wonderful food drive in the Bronx by helping to unload seven truckloads of Smithfield products that will be given out at the Food Bank. It was hard work, but so worth it!


With the Holidays coming up, it's important to do something to help those in need. It does good for your soul, and for the world around you. My family didn't have a lot but we were never hungry. I just can't imagine the pain it would cause a mom and dad to hear that their child is hungry and not be able to help. It just breaks my heart. That's why this cause is so important to me and why I feel so blessed to get that chance to help. We need to raise awareness about hunger and really help our fellow man.

Biscuit Time!

I am so pleased to have my great friend Jellyroll in the kitchen with me this week. Jellyroll has been a part of my life for over a decade. You might have seen her stealing the show in the first video we ever put up here on Get Cookin'. She works at The Lady & Sons and is one of the first faces you see when you walk in. She always has a smile on her face, and rings the lunchtime bell every day. She is a star in Savannah and one of my favorite people in the whole world!
Oh yeah, and she can REALLY cook biscuits. She has made thousands of em and I consider her a certified pro.
We're cookin' up Thanksgiving dishes all this month, and this week, if you hadn't guessed, is all about biscuits! My thanksgiving table would be absolutely naked without biscuits. Jellyroll and I are gonna take you through making a traditional garlic and cheese biscuit. SO delicious! How do you make your biscuits?
Like I mentioned last week, we're asking you to send in your dishes AFTER you cook your Thanksgiving dinner. That way you can have a family member or friend take pictures and video of you preparing your Thanksgiving meal and then send it in to Get Cookin' for the activity challenges! We will announce the winners of each of the dishes, after the holiday.
Now, if you want to send it your dishes every week like usual, we welcome you do that, and we'll still post them on the Community Dishes blog. You can submit for each week's theme starting that week and lasting up until the Wednesday before Thanksgiving. There will be eight winners this month, two from each of the Thanksgiving dishes. Each winner will get a signed copy of my book 'Paula Deen Celebrates', which has recipes for every holiday of the year, from Thanksgiving to Elvis's birthday!
