Honey Time!

This week on Get Cookin' we are cookin' with honey. Did you know that honey is the only food that doesn't spoil? Seriously, you could eat honey from a thousand years ago and it would still be good. Wow, those bees sure do make a quality product! Speaking of quality products, we are using the most wonderful honey made by my good friend Ted Dennard. Ted owns the Savannah Bee Company. He is such a smart and interesting guy, and cute as a button! He was in the peace corp and learned about bee keeping at a very young age. Ted took his passion for honey and started the Savannah Bee Company. I think they make some of the world's best honey and I'd love for you to try some.
We prepared honey glazed pork tenderloin and we made honey butter! I honestly can't think of anything better in the world than honey butter. I eat a slice of wheat toast with honey almost every day for breakfast, it is so delicious and not too bad for me. I hope y'all love honey as much as I do because you are in for a sweet week!

- Honey Thyme Glazed Pork Tenderloin
- Ingredients:
* 2 whole pork tenderloins, cleaned
* 4 sprigs of fresh thyme
* 2 ounce Savannah Bee Company Sourwood Honey
* Salt and Black Pepper
Directions:
Clean the fat and the silverskin from the pork. Chop the thyme and combine with Savannah Bee Company Sourwood Honey. Season pork with salt and pepper. Heat pan to medium high and sear meat on all sides. Pour the thyme and honey mix over the pork and cook in a 350 degree oven. Cook to desired doneness, turning a few times to glaze the meat. Rest for 5 minutes before slicing. Recipe compliments of Scott Ostrander, Pink House Restaurant, Savannah, GA

That honey looks so good. We bought some local honey a couple of weeks ago, it is so good mixed with butter and smothered on my Mom's homemade biscuits!!! Wish I had one right now, MMMMMMMMMMMM!!!! -

I posted my recipe and nice photos for my Peanutbutter Honey Chicken Wraps.
I served this with my delicious Honey Orange Cornbread Poppers....they are always a hit with their little surprize inside :) I will post the recipe for those too :)

I don't know that this is a funny story but it bring us joy...for years my beloved father-in-law would always bring us honey. Every visit we made to his house or him to ours, he had a jar of honey for us. He only got his honey from one "ol' boy" in the mountains (meaning, some elderly gentleman, not in a store...which made me giggle, as my father-in-law was in his 70's). Along with the story, came the exact same story/anecdote; he would say: "Ya'll like honey? I like honey. I like to put honey on my toast in the morning. I put the toast in my toaster and get it a little browned up and pour the oney on it. You know, honey gives ya energy? Ya know, honey has good vitamins for you, too. Ya'll like honey, Lynn? " This story could be told by most anyone in our family, as daddy (what I called him, though he was my father-in-law) told this story to everyone he gave honey to. Well, Daddy had Alzheimer's and there came a time, (as with most all things dealing with folks with Alzheimer's) when the honey story stopped and giving of the honey stopped. It was sad. As much as we all "picked fun" with Daddy and Mom, too (because she'd stand quietly by as he went through his "dialogue" every time)... more than anything, we miss Daddy tell his story and asking all of "ya'll like honey?" Needless to say, not a one of us can eat/use honey without thinking of Daddy to this day. It's a good thing! -

I keep honey in the house year round. Especially like purchasing honey from different states that I travel because the flavors are sometimes very unique. Honey is my go to sweet so I use it in alot of recipes. One neat product that I have found is a Tart Honey flavor icecream. Check out the freezer section at your local grocery store and you will probably find it. The flavor is very good. They also have a limited time only Pumpkin Flavor icecream. Enjoy.
