  • Hi Paula - I am very proud of you - getting in shape is one of the best things you can do for yourself (both mentally and physically!) Keep up the good work and keep encouraging those you are visible too -  many of us need the encouragement for our own personal reason that you provide.  Being healthy and reasonably in shape is wonderful, but good cookin feeds the heart and soul. Hugs

  • You rock, Paula!  Keep up the good work.  I know it's hard.   I don't like to exercise either.  But if you find something you like to do that move's your butt it's a good thing.  Ten years ago I lost 200lbs and have kept it off all the years.  And yeah, I LOVE butter and bacon and eat it!  Just not every day.  My mom was a great cook but didn't leave me with any recipes....you cook just like she did.  Thanks for teaching me all those great recipes from our past,  Love you, Leslie

    I am so proud of Paula for getting up so freakin' early and working out.  I need to get in an exercise program for my health and Paula's steps have been a true inspiration for me.  Paula has shown me to follow my dreams and really LIVE life, not just exist for the next day.  Thanks to the whole crew for sharing her (and their) journey!!

My Healthy Pizza

These photos are from user Joann Rodriquez, who cooked up a "pizza for the health conscious".  Here are the ingredients: crunchy thin crust, topped with oregano, basil, cherry tomatoes, freshly chopped garlic, spinach, parmesan, mozarella and drizzled with extra virgin oilive oil.

Healthy Fried Green Tomatoes

  • Healthy Fried Green Tomatoes
    This is not my favorite way to eat Fried Green Tomatoes. I am still a sucker for the real deal, oh how I love my Fried Green Tomaotes. I guess this is the alternative i have to make if I want to enjoy my favorite tomoatoes while watching what i eat. They are a bit dryer than the fried version, but I guess you have to give up a few things to make healthy choices.

    6 hard green tomatoes, sliced 1/4 inch thick
    Kosher Salt
    Pepper
    3/4 cup whole wheat or all purpose flour
    3/4 cup fat free or low fat buttermilk
    dash of hot sauce
    3/4 cup yellow corn meal
    1 1/2 cups panko bread crumbs
    Light or Fat Free Ranch Dressing for Dipping

    Season tomatoes with salt and pepper. Place flour on a plate. Whisk together the buttermilk and hot sause in a shallow bowl. In another seperat bowl mix together  the corn meal and the panko bread crumbs. One tomato slice at a time coat the tomato slice first in flour (shake off excess), then dip in the buttermilk and last the panko bread crumb mixture.  Transfer the breaded tomato slices to a baking sheet lined with a baking/cooling rack that fits inside the baking pan. Preheat oven to 375 degrees and bake tomato slices until crispy and brown. Sprinkle with additional salt and pepper and serve with your choice of dipping sauce.

    * I have replaced reg. buttermilk with fat free or lowfat. regular flour with whole wheat and instead of frying the green tomatoes I have baked them.

Orange Brownies

User Diane Higgins posted a photo and recipe of Orange Brownies, a healthier altnerative to a sweet treat.  Here is Diane's description of her dish:

"When watching your weight it seems that you still need to give yourself a little sweet treat. I make Paula's Orange brownies lighter by changing the butter. I substitute half the amount of butter with a well mashed banana and the other half of the amount of butter with "I can't believe its not butter". Not only do the brownies taste great, they are lower in calories, lower in the amount of saturated fat plus potassium from the banana. I have served these brownies with a fresh fruit salad and ice tea for a light lunch on a hot summer day. Everyone raved!!!!!"

Cool Cucumber Salad

  • COOL CUCUMBER SALAD
    COOL CUCUMBER SALAD
    4-5 cucumbers
    2 medium sweet onions
    1/4 cup "lite" olive oil
    1/2 cup of a good mayonnaise
    1/4 cup white vinegar
    1 tbsp seeded mustard (Plochmann's or the like)
    1/2 tsp dill, a bit less if you use it fresh from the garden
    1/4 tsp Sea salt
    1/4 tsp Black pepper
    >Using a mandolin...or a very steady hand...thinly slice the cucumbers and onions.
    >Place them in a pretty bowl
    >Salt and pepper the slices and set aside while you mix up the mayo base.
    >Whisk together the olive oil, vinegar and mayonnaise thoroughly.
    >Add the mustard into the base mixture.
    >Slowly fold in the dill...not too fast to avoid clumping the dill into the mix.
    >Gently combine the base and the veggies.
    >Chill until ready to serve.
    This salad is the perfect side for a lite lunch of egg salad and pumpernickel sandwiches or for an early supper on a summer Saturday with freshly grilled chicken breasts.
