Green Tomato Pie

Ingredients:

6 to 8 medium green tomatoes
2 tablespoons lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
3/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon butter pastry to 9-inch 2-crust pie

Preparation:

Wash the green tomatoes well; peel and slice. In a saucepan, combine tomatoes with lemon juice, peel, salt, and cinnamon. Cook tomato mixture over low heat, stirring frequently. Combine sugar and cornstarch; stir into tomato mixture. Cook mixture until clear, stirring constantly. Add butter, remove from heat, and let stand until slightly cooled. Line a 9-inch pie plate with pastry; pour in tomato mixture. Cover with top pastry, seal edges, crimp, and cut several small slits in crust to allow steam to escape.

Bake at 435° for 35 to 45 minutes, or until nicely browned. Serve warm or cooled.

Crustless Green Tomato Pie

2 green tomatoes

1 large sweet onion

1 C. ricotta (I used fat free)
1 C. egg beaters (or 4 eggs)

1 C. chedder and/or mozerella cheese (I used fat free)

Sea salt
Pepper, fresh ground is best

Nutmeg
Granulated garlic

I use a large, deep ceramic pie pan.  Spray it with a heavy coat of no-stick spray, and coat with flour until no more will stick. Slice the tomatoes and onion very thin.  Place a layer of tomatoes and a layer of onions in the prepared pie pan.  Season with salt and pepper.  Repeat until all tomatoes and onions have been used. Mix the cheeses, eggs, nutmeg, and a bit more salt and pepper and pour over layers of tomato and onion.

Bake at 350 deg. for about an hour, until golden brown.

Yum.

Fried Green Tomatoes with Lemon Cayenne Mayonnaise


Serves 8






Ingredients...
3 each Green Tomatoes, sliced 1/4 inch thick
8 ounces Cream Cheese
1 tsp. Dry Basil
2 tsp. Salt
1 tsp. Pepper
1 C Flour
4 each Eggs, beaten
3 C Japanese bread crumbs (Panko)
1 tbsp. Parsley, minced






To Prepare Green Tomatoes...
Mix cream cheese with basil and half of the salt & pepper. Place 1/2 tablespoon of cream cheese mixture on one slice of tomato. Press another tomato slice on top of cream cheese to make a sandwich. Mix parsley into bread crumbs. Mix remaining salt & pepper into flour. Dredge tomato sandwich into seasoned flour. Shake off excess flour. Dip in eggs. Shake off excess egg. Roll in bread crumb mixture to coat.






To Prepare Lemon Cayenne Mayonnaise...
Whisk together 1 cup mayonnaise, 2 tablespoons lemon juice, 1 teaspoon cayenne pepper, 1/2 teaspoon salt and 1 teaspoon paprika. Refrigerate until ready to use.




To Finish...
Fry at 350 degrees until golden brown. Pat dry with paper towel. Drizzle with Lemon Cayenne Mayonnaise

Hey Ya'll, Thought I would put a twist on the classic sandwich everyone in America loves, well at least down here in Texas...Chelsy's Ultimate Green Tomato Grilled Cheese Sandwich.

Recipe Directions:

1. Fry 2 slices of full-fat bacon (none of that turkey bacon ya'll, the "real stuff" is the only piggy that works) in a large non stick skillet.

2. While bacon is frying take two slices of whole wheat bread and spread each side of whole wheat bread with mayonnaise, and slice green onions into thicks 1 inch slices.

3. Remove bacon and drain pan of bacon grease.

4. Place skillet back over heat and add 2-3 TBS of butter.

5. Layer a slice of cheddar cheese (i use kraft singles, a slice of block cheddar, or even velveeta) on to each of the two slices of bread, add 2-3 slices of the green tomatoes (i usually lighty season the tomatoes with salt, pepper, and sometimes paprika for that extra kick), place the bacon slices over the green tomatoes or crumble the bacon over the tomatoes, top with other slice of bread.

6. Place sandwhich in buttered skillet and grill sandwich until your desired toasted perfection!

7. Enjoy this simple masterpiece with ranch wavy lays or for a healthier side, some carrots and ranch dip. DONT forget that large glass of milk!

*Ranch Fried Green Tomatoes*

1 green tomato, sliced
1/4 cup flour
1/4 cup buttermilk
1 box Ranch croutons, crushed
1 tbsp hot sauce
2 tsp salt
1 tsp garlic powder
1 tsp dried parsley

Sprinkle tomatoes with salt, garlic powder, and parsley. Use 3 separate containers for (1) flour, (2) buttermilk & hot sauce mixture, and (3) croutons. Add hot sauce to buttermilk and stir. Take tomatoes through each step of breading process, shaking off excess each time. Deep fry at about 350 until golden brown!

*Dipping Sauce*
1/4 cup mayonnaise
1 tbsp buttermilk
1 tbsp dill
1 tsp fresh lime juice

Mix well and serve cold with tomatoes!

my fried green tomatoes

old bay seasoning--season to taste..but i add sometimes a teaspoon depends on how much you like the old bay seasoning!
good fresh large tomatoes about 3 or 4
black pepper--to your liking..
salt--pinch of salt..
tobasco sauce---as much as you can take
cup of cornmeal( may have to add a little more than a cup sometimes ...
cup of all purpose flour(same as above....
egg -beaten
whole milk ---about a cup or 2 cups and mix the egg with the milk with some tobasco

* cut the maters in thick slices, set aside but shake on tobasco sauce  too.....mix egg and milk together..add some more tobasco sauce, and a pinch of salt; mix up the flour, cornmeal then add the pepper, pinch of salt and old bay seasonings...mix all together...make a station of the milk/egg bowl, then the flour/cornmeal ...have a cast iron black skillet heating on the stove with either canola oil or peanut oil...dip the sliced maters in the milk/egg mixture and then dip in the flour/cornmeal...then proceed to fry in the oil..cook just until brown.. drain on paper towels get ready to serve.,...and I have a bleu cheese or ranch dip on the side ...sometimes i make a grainy mustard sauce with tobasco sauce...( i add tobasco to bleu cheese and ranch as well.....I like tobasco like you love your BUTTER...LOL..)

Easy green tomato salsa!

Coarsely chop the following:
4 large green tomatoes or the equivalent of..
2 medium green chilies  ( substitute a jalapeno if you want extra spice)
1/2 a medium sweet yellow onion
1 green bell pepper (seeded)
1 small bunch cilantro stems removed
1 clove garlic

Place all of the above in a blender and blend until smooth. 
Add 1/2 -1tsp salt blend to mix.

Can be used for tacos or for a nice differnt chip dip.

Green Tomatillo's

  • Green...Tomatillos

    I couldnt find green tomatoes!! lol or didnt look hard enough. Not happy about this! Anyways, I used green tomatillos for my dish lol not the same but hey I tried to find those green... tomatoes lol. Once again I got clever(or lazy lol)  and improvised.   I do this a lot lately ;p

    This dish is my version of
      Huevos Rancheros with Salsa Verde
      1 Jalapeno pepper
      1 large tomatillo( used to replace the green tomato)
      1 can of salsa verde (hot)
      1/2 cup of Pico de Gallo ( is chopped tomatos, onions, and cilantro)
      1 sunny side up egg
      1 corn tortilla
      Sharp Cheddar Cheese for topping
      Chop the tomatillos,  the jalapeno pepper, put them in a bowl, add the can of salsa verde,  and the Pico de Gallo combine, set aside.
       In a hot pan, add some butter, heat up the tortilla on both sides, until it looks crunchy but dont burn it.  Remove it, place on a plate.  On the same pan make a sunny side up egg.  Place egg on top of the corn tortilla, then top the egg with the salsa verde/pico de gallo mixture.  Top with sharp cheddar cheese, enjoy!

    This dish is  very spicy for breakfast, if you like hot dishes, you will love this! this is so spicy, is guaranteed to wake you up!

This photo and recipe set is from Joann Rodriguez, who improvised a bit with the dish of the week.  She couldn't find green tomatoes in her area, so she substituted green tomatillo's; part of cooking well is improvising in a pinch.  We commend Joann for making her dish work, even when she was missing the prime ingredient.

Green Tomato Relish

    Our tomato plants have just about come to an end in our garden. The heat is so bad that the plants are starting to dry out and burn up, don't you just love the Texas Heat!!  So far we have gotten a great crop of tomatoes this year. I have canned and frozen several batches for winter, but the last of the crop was green tomoatoes. I love my fried green tomatoes, but I am already thinking about the holidays and all the homemade gifts I love to give. One of my favorites is Green Tomato Relish. If you have never tried it you dont know what your are missing. You can get tomoato relish in just about any great seafood restraurant in the south. This relish also pairs well with with sausages, pork, ham, or serve it with hot dogs or burgers. I diced up my veggies for this recipe because i like a chunkier relish. Whatever way your gonna love it.

    Green Tomato Relish

    12 large green Tomatoes (cored)
    (I used about 20 small to med size)
    4 - green bell peppers, seeded
    4 - medium yellow onions (I used one very large one)
    1 - red bell pepper, seeded
    1 - tablespoon + 2 teaspoons yellow mustard seed
    1 - tablespoon celery seed
    2 - cups cider vinegar
    2 - cups granulated sugar
    1 tablespoon + 2 teaspoons kosher salt

    Chop the tomatoes and peppers very finely. Using a food processor or by hand chop up the peppers and inions. I diced up all my veggies only because I like a chunkier relish. Put the chopped vegetables in a large pot (heavy bottom non reactive pot) add the mustard seed, celery seed, vinegar, kosher salt and sugar. Stir well and bring to a simmer over medium heat. Cook stirring often and skimming as needed. (I did not have to skim off anything) Simmer until the relish cooks down and thickens into a relish, about 2 hours. Turn into hot sterilized jars and process in a hot water bath.
