White Lily Flour began milling in 1883 in Knoxville, TN. Last year Smuckers bought the Mill and moved operations to their two plants in the midwest. They have tried to duplicate the southern kind but bakers can tell the difference. When the shelves are empty in the grocery stores, you have seen the last of the real White Lily Flour. I was fortunate to learn about this change of ownership and bought several bags to keep in the freezer, over wrapped, of course.Martha White comes very close to being a good substitute.

I love White Lilly flour, but now days I have to buy the cheap and it shows when I make my bisuits. After I first got married I tried to make biscuits so I called up mama, she told me how she didn't measure anything, just eyeball it. They were awful!!!! like little round white hockey pucks. My husband tried to eat them so he wouldn't hurt my feelings. But now he knows he can joke about them, because after 11 years of throwing those hard little biscuits at his head, I got it right!!!!!! Hurray for me. Now it's every sunday morning we have scrambled eggs, gravy, choc gravy for the kids and biscuits. And the secret behind every good biscuit is dabbing bacon grease on the top before you bake them. -

Oh wow!! I have never been able to make a decent biscuit and my Mom makes the most wonderful biscuits on earth! It has never mattered what kind of flour she uses but maybe if I use the White Lilly it will make a big difference for me! We will see..lol -

Growing up around my Nanny in Arkansas, she made biscuits every morning - 7 days a week. She made her dough just the old fashioned way: Gold Medal Flour (self rising), baking powder, dash of salt, cut in the Crisco, and butter milk. But before she mixed up the dough with her fingers, she preheated the oven, tossed a stick of butter on a cookie sheet and let it melt until her dough was ready. As she cut her biscuits out with a drinking glass, she would butter each side of the round by flipping it over quickly in the melted butter. Once she got her pan full, she baked them. Like some of you other folks, Nanny never used a measuring cup and man were they good! My story is not unique but I have fond memories of watching her do it. -

I don't know how goofy it is but maybe....when I bake biscuits I add 3/4 of a cup of mixed taco cheese that comes in a bag, It gives them a little extra punch and especially good when I'm serving them with chili. -

Biscuit Time!
Posted by Paula Deen on Thursday, Nov 5, 2009 at 7:08 pm
Hey y'all!
I am so pleased to have my great friend Jellyroll in the kitchen with me this week. Jellyroll has been a part of my life for over a decade. You might have seen her stealing the show in the first video we ever put up here on Get Cookin'. She works at The Lady & Sons and is one of the first faces you see when you walk in. She always has a smile on her face, and rings the lunchtime bell every day. She is a star in Savannah and one of my favorite people in the whole world!
Oh yeah, and she can REALLY cook biscuits. She has made thousands of em and I consider her a certified pro.
We're cookin' up Thanksgiving dishes all this month, and this week, if you hadn't guessed, is all about biscuits! My thanksgiving table would be absolutely naked without biscuits. Jellyroll and I are gonna take you through making a traditional garlic and cheese biscuit. SO delicious! How do you make your biscuits?
Like I mentioned last week, we're asking you to send in your dishes AFTER you cook your Thanksgiving dinner. That way you can have a family member or friend take pictures and video of you preparing your Thanksgiving meal and then send it in to Get Cookin' for the activity challenges! We will announce the winners of each of the dishes, after the holiday.
Now, if you want to send it your dishes every week like usual, we welcome you do that, and we'll still post them on the Community Dishes blog. You can submit for each week's theme starting that week and lasting up until the Wednesday before Thanksgiving. There will be eight winners this month, two from each of the Thanksgiving dishes. Each winner will get a signed copy of my book 'Paula Deen Celebrates', which has recipes for every holiday of the year, from Thanksgiving to Elvis's birthday!
